When the peonies have reached the perfect state of maturity, they are hand-cut by workers who look for proper stem length and bud opening, and then select them one by one. Immediately after being cut, workers begin the post-harvest process in refrigerated rooms where the temperature is lowered to approximately 35-40 degrees where guard petals are meticulously removed to prepare the flowers for shipping. At this temperature the stems remain in a dormant condition, to help maintain the proper tension within each peony to maximize the timing and degree of blooming. Peonies are graded and sorted and bundled, then hydrated and prepared for their journey to you.
